Crispy Breaded Shrimp with Garlicky Beans
serves 4, submitted by Jen G.

1/2 cup bread crumbs
2 T. chopped fresh rosemary
kosher salt and pepper
5 T. olive oil
1 lb. medium shrimp, peeled and deveined
1 (or more) clove garlic, chopped
1 19-oz. can cannellini beans, rinsed and drained
2 bunches of arugula, trimmed (or baby spinach)
Heat oven to 400.
Mix the breadcrumbs, rosemary, 1/2 t. of salt, 1/4 t. pepper and 3 T of oil in a large bowl.
Add the shrimp and toss to coat. Transfer shrimp and any excess breadcrumbs to a baking sheet.
Bake until the shrimp are cooked through and the breadcrumbs are crispy -- 10-12 minutes.
Meanwhile, heat remaining oil in a medium skillet over med-high heat.
Add the garlic and cook, stirring for 30 seconds. Add the beans, 1/4 c water, 1/4 t. salt and pepper.
Cook until heated through, about 2 minutes.
Remove from heat and add the arugula, toss to combine.
Divide the beans among individual plates and serve with the shrimp on top.

Quick and Easy Pizza (serves 3)

1 Multigrain Stone-Baked Pizza Crust (Forest Ave Key-Food)
1 container of Pastosa Marinara Sauce
Handful of Ready Pac Spinach
1 12 ounce bag of Low Moisture part skim mozzarella
1/2 pound lean ground sirloin chop meat ( can substitute it with chicken, turkey)
Preheat oven to 400 degrees.
Warm sauce in a saucepan and brown meat in a skillet.
Spray some Pam on a cooking tray.
Top pizza to your liking with sauce, cheese, spinach, and meat.
Bake in oven for about 15 minutes and enjoy!
Remember to not go overboard with the cheese, 1 bag is more than
enough. If you wanted to make two pizza's, just brown about
a pound of ground sirloin chop meat
Aztec Casserole

16 oz ground turkey or lean ground beef
2 cups cooked brown rice
1/2 tsp cumin
2 tbsp cilantro (chopped fresh is best)
1/2 cup diced onion
1 15 oz jar salsa (mild, medium or hot , whatever you like)
2 cloves garlic diced
4 tbsp reduced fat mexican blend shredded cheese
whole wheat tortillas (optional)

Brown turkey or beef in a large non-stick skillet preheated over medium heat (about 3 - 4 min).
Add onion and garlic and saute 3 to 5 min or until soft.
Drain fat. Add cumin, rice, salsa and cilantro, stirring to mix well.
Reduce heat to low and simmer 6 to 8 min.
Top each serving with a tbsp of cheese.
Serves 4
For a nice burrito spoon 3 - 4 oz into a whole wheat tortilla and wrap
